Ingredients

1 bottle (200 ml)Fresubin PLANT-BASED Drink Vanilla flavour
½Apple
125 gCarrots
1Very small onion or shallot
100 mlVegetable broth or stock
1–2 tbsp.Lemon juice
Salt, pepper, ground nutmeg
½ tsp.Aromatic oil such as pumpkin seed oil, toasted sesame oil, or garlic oil

Preparation

  1. Peel and core the apple. Peel the carrots and onion as well. Dice the apple, carrots, and onion. Wash the chives, shake dry, and chop.
  2. Heat the diced vegetables and apples with the vegetable broth or stock, then cover and cook for 10 to 15 minutes. Add Fresubin® PLANT-BASED Drink Vanilla flavour and purée the soup finely. If the soup is too thick, add a bit more broth. Season to taste with lemon juice, salt, pepper, and nutmeg.
  3. After pouring the soup into the bowl, drizzle aromatic oil on it, then sprinkle with chopped chives.

 

You can add a small piece of minced fresh ginger root to the pot with the diced vegetables and apples if you like.
