Ingredients

1 bottle (200 ml)Fresubin PLANT-BASED Drink Vanilla flavour
½ bunchBasil
1–2 tbsp.Lemon juice
2 tbsp. (30 g)Chia seed
1 piece (approx. 80 g)Cucumber
1 wedge (approx. 125 g)Cantaloupe or Charentais melon
1 smallSpring onion
Pinch ofSalt, chili powder
Squirt ofCrema di Balsamico or other balsamic vinegar
  1. Wash the basil, shake dry, and chop roughly. Combine Fresubin® PLANT-BASED Drink Vanilla flavour, basil, and lemon juice in a mixer and purée. Stir the chia seeds into the green, herbal drink and transfer to a glass. Refrigerate for at least 30 minutes for the flavours to meld.
  2. Wash the cucumber, pat dry, and peel if desired. Peel the melon. Finely dice the cucumber and melon. Clean the spring onion and either slice or dice finely. Combine all ingredients and season with a bit of salt and a hint of chilli powder.
  3. Arrange salsa on top of the chia pudding and drizzle with a bit of Crema di Balsamico or other balsamic vinegar.

Depending on your preferences, this pudding is also delicious with parsley, arugula, chervil or cilantro. You can also use frozen herbs in a pinch.
