Ingredients

1 bottle (200 ml)Fresubin PLANT-BASED Drink Vanilla flavour
500–600 gFresh vegetables as desired, such as bell pepper, courgette, spring onions, mushrooms
1 tbsp.Oil, salt, pepper
1–2 tsp.Curry paste or curry powder
1 tbsp.Tomato paste
1–2 tbsp.Lime juice
1 tbsp.Peanut butter
1 tsp.Cornstarch (optional)
2 tbsp.Chopped herbs, such as cilantro or parsley

Preparation

  1. Wash and clean the vegetables, then cut into bite-sized pieces. Slice the mushrooms in either halves or quarters, depending on size.
  2. Heat the oil in a frying pan, then sauté the vegetables over medium heat, stirring constantly until crisp. This will take about 5 to 10 minutes, depending on the type of vegetable. Season with a bit of salt and pepper.
  3. In a small bowl, combine Fresubin® PLANT-BASED Drink Vanilla flavour with curry paste or powder, tomato paste, lime juice, and peanut butter. Pour the mixture over the vegetables, then heat briefly. Optionally, you can season to taste with more lime juice and curry, and thicken slightly as desired with a bit of starch dissolved in water.
  4. Serve sprinkled with herbs.

This savoury vegetable curry is perfect with rice or flatbread. Feel free to use frozen vegetables if time is short. Mixed vegetables without any added cream or fat are an especially suitable choice here.
